Spicy Roasted Broccoli

This broccoli is packed with flavor and cooks up super quick.

Yield: 4 servings

1/4 cup (60 ml) olive oil
8 to 10 cloves garlic, thinly sliced
1 pound (454 g) broccoli florets
2 tablespoons (30 ml) sesame oil
1/2 teaspoon sea salt
1/2 teaspoon red pepper flakes

Preheat the oven to 375°F (190°C, or gas mark 5). Line a baking sheet with parchment paper or a baking mat.

Heat the olive oil in a pan over medium-high heat. Add the garlic and fry until crispy and brown (like making garlic chips).

Place the broccoli in a bowl. Pour the hot olive oil and garlic onto the broccoli. Add the sesame oil, salt, and red pepper flakes. Toss to mix. Spread in a single layer on the prepared baking sheet and roast for 10 minutes, or until the broccoli is tender yet still firm (cooked through but not mushy).
